Here is a delicious recipe for broccoli cheese soup:

Ingredients:
– 3 tablespoons butter
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups broccoli florets
– 3 cups vegetable or chicken broth
– 3 tablespoons all-purpose flour
– 2 cups milk
– 1 1/2 cups shredded cheddar cheese
– 1/2 tsp dried thyme
– Salt and pepper to taste

Instructions:

1. In a large pot, melt the butter over medium heat. Add the onions and garlic and cook for 2-3 minutes until translucent.

2. Add the broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer for 5 minutes until broccoli is tender.

3. In a small bowl, whisk together the flour and milk until smooth. Pour into the pot with the broccoli.

4. Add the shredded cheddar cheese and thyme. Season with salt and pepper to taste.

5. Cook over medium-low heat, stirring frequently, until the soup thickens and the cheese melts, about 5-10 minutes.

6. Remove from heat. Use an immersion blender to puree the soup until smooth and creamy.

7. Adjust consistency with more milk or broth as needed. Add additional salt and pepper to taste.

8. Serve warm, garnished with extra shredded cheese, croutons, or fresh herbs like chives if desired. Enjoy!
