Chicken Parmesan Roll-ups

Ingredients:
– 4 chicken breasts, pounded thin
– 1 cup breadcrumbs
– 1⁄2 cup freshly grated Parmesan cheese
– 1 egg, beaten
– 2 tablespoons milk
– 1 jar marinara sauce
– 8 slices provolone cheese
– Fresh basil leaves for garnish

Instructions:

1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

2. In a shallow dish, mix together the breadcrumbs and Parmesan. In another shallow dish, whisk together the egg and milk.

3. Dip each chicken breast in the egg mixture, then coat completely in the breadcrumb mixture. Transfer to the prepared baking sheet.

4. Spread a few tablespoons of marinara sauce on each chicken breast. Top each with a slice of provolone cheese.

5. Starting at one short end, roll up each chicken breast tightly. Secure with toothpicks if needed.

6. Bake for 20-25 minutes until chicken is cooked through and cheese is melted.

7. Transfer roll ups to a serving platter. Top with any remaining marinara sauce and garnish with fresh basil.

Serve warm with extra marinara sauce for dipping if desired. Enjoy!
